21 Insert the bowl: – Tilt the bowl forwards and then set it down (1.), – turn counter-clockwise until it locks into place (2.). Press the Release button and move the swivel arm to position 3. Hold disc holder at the lower end, ensuring that the two tips are face up. Carefully place the required slicing or shredding disc onto the tips of the disc holder. In the case of reversible discs, ensure that the required side is face up. Grip disc holder at the upper end and insert into the housing. Attach the cover (note mark) and rotate all the way in a clockwise direction. Place continuous-feed shredder on the drive and rotate all the way in a clockwise direction. Plug the electrical cord into a convenient nearby receptacle.
22 Switch the unit on. Switch the On / Off button to the “I” (On) position. The illuminated ring (6, figure 1) flashes. Set the rotary switch to the desired speed setting. Put food to be processed in the feed tube and push down with the pusher. Prevent the cut ingredients from building up in the outlet opening. Note: If the food to be processed sticks in the continuous-feed shredder, switch appliance off, pull out main plug, wait until the drive comes to a standstill, remove cover from the continuous-feed shredder and empty feed tube. After using the appliance Switch off the appliance with the rotary switch. Switch the On / Off button to the “0” (Off) position. Pull out the main plug. Rotate the continuous-feed shredder in an counter-clockwise direction and remove. Rotate the lid in a counter-clockwise direction and remove.
23 Remove disc holder with disc. To do this, press finger from below against the drive shaft. Clean all parts, see “Cleaning the appliance”. Slicing and shredding tips: – Shopping for fruits and vegetables that will fit into the feeding tube will simplify food preparation. – To ensure even cutting results, process thin ingredients in bunches. – Foods that are to be used together may be sliced together. This can be used to your advantage. For example, green onions and celery are often used together, but feeding the green onions into the feeding tube alone is difficult. Try slicing the green onions at the same time as the celery by interspersing them in the feeding tube with the celery.– Use the slicing disc to shred lettuce. – Do not overcook potatoes that are to be sliced. Also it is recommended that you let them cool first. Potatoes must be cool and firm to obtain the regular slices.
24 CLEANING THE APPLIANCE Cleaning the base unit Pull out the main plug. Wipe the base unit and drive cover with a damp cloth. If required, use a little detergent. Then dry the base unit. Cleaning the bowl and tools Bowl and tools are dishwasher-safe. Do not wedge plastic parts in the dishwasher, as they could be permanently deformed during the washing process! Cleaning the continuous-feed shredder All parts of the continuous-feed shredder are dishwasher-safe. Tip: To remove the red film after processing e.g. carrots, pour a little cooking oil on a cloth and rub the film off the continuous-feed shredder (not the cutting discs). Then rinse the continuous-feed shredder. Important information: If required, clean accessories bag. Follow care instructions in the bag. NOTICE Do NOT use abrasive cleaning agents. Surfaces may be damaged. ,WARNING Never immerse the base unit in water or place under running water. Do not use a steam cleaner. Risk of electric shock! ,WARNING Cut Hazard Do not grip the sharp blades or cutting edges of the cutting discs. Take hold of cutting discs by the edge only. Risk of injury from sharp blades!
25 TROUBLESHOOTING The display flashes faster in switch position 1–4 – if the appliance has been operated incorrectly or – the fuse has tripped or – the appliance is damaged. ,WARNING Before dealing a problem, unplug the appliance. Risk of electric shock or injury! Problem Possible Cause and Remedy No power. A circuit breaker may have tripped or a fuse has blown in power supply circuit. Reset circuit breaker or replace fuse. There is power to unit, but nothing happens when rotary switch is turned.The swivel arm must be engaged in every operating position. Check swivel arm. Correct position? Engaged? The appliance can be switched on in position 1 and 3 only when the bowl has been inserted and turned until it locks into place. Screw on bowl as far as possible. The safety lock is active. Turn the power unit to the off position “O/Off” and then back to the required setting. Appliance switches off during use. The overload protection feature has been activated. Too much food was processed at one time. Turn the power unit to the off position “O/Off” and unplug. Remove contents of attachment being used and loosen whatever has caused the jam. Reinstall attachment and restart.
26 SAMPLE RECIPES French bread 2 Tbsp active dry yeast 2 cups hot water 3 Tbsp sugar 1 tablespoon salt 1/2 cup vegetable oil 5 cups of flour (white or wheat) 2 Tbsp gluten Place all ingredients in Bosch mixing bowl. Thoroughly knead on speed 1 or 2 (8–10 minutes). Let rise in the bowl 10 minutes, then punch down. Punch down 4 or 5 times. Divide into 3–4 regular loaf pans or shape into rounds. Slash tops with sharp knife and brush with egg wash. Let raise until doubled in size. Bake 30 minutes at 400 °F. Oatmeal chocolate chip cookies 2 cups packed brown sugar 1 cup shortening 2 eggs 1 tsp vanilla 1 3/4 cups flour 1 tsp baking soda 1/2 tsp salt 3 cups quick-cooking rolled oats 1 cup chocolate chips Cream the brown sugar, shortening, eggs and vanilla in the mixing bowl, on speed 1 or 2. Add flour, baking soda and salt. Blend well, add in rolled oats and chocolate chips by hand. Drop by spoonfuls onto greased baking sheets. Bake in 350 °F oven for 8–10 minutes. Cool before removing from pan. Makes 5 dozen. Problem Possible Cause and Remedy While the drive was running, the release button was inadvertently pressed.The swivel arm moves up. The drive switches off, but does not stop in the tool change position. Turn the power unit to the off position “O/Off” . Move swivel arm to position 1. Switch on appliance (setting 1). Switch off appliance again. Tool stops in tool change position. If the problem cannot be eliminated, please contact customer service.
27 Whole Wheat Bread 3 cups hot tap water 1/3 cup oil 1/3 cup honey 1 Tbsp salt 2 Tbsp Vital Wheat Gluten 1 Tbsp Dough Enhancer 2 Tbsp SAF instant yeast 7–8 cups freshly milled whole wheat flour Pour all ingredients into MUM5 mixing bowl.* Turn mixer to speed 2 and allow to knead for 8–10 minutes, adding additional flour or water if needed. Shape into 2–3 loaves. Let rise until doubled. Bake at 350°F for 30–35 minutes. * This kitchen machine makes better bread if all ingredients are add all at the same time. Yummy Orange Rolls Recipe of Bob Hair – Sandy Bosch Kitchen Center 4 Tbsp sugar 5 Tbsp shortening 1 tsp salt 1 cup scalded milk (cool) 2 eggs 3 1/2 – 4 cups flour 1 Tbsp yeast Orange Mixture: (Mix the following 3 ingredients together) 1 cup sugar 6 Tbsp butter (not melted) Grated rind of one orange Put all ingredients in MUM5 and mix 5 –7 minutes. Roll out on counter into large rectangle. Mix sugar, butter and grated orange rind together. Spread evenly on dough. Roll up evenly (as for cinnamon rolls). Slice roll into 1" thick slices. Place in buttered muffin tins. Let rise double. Bake at 350°F for 15 minutes. Almond Sweet Rolls ¾ cup blanched almonds, chopped 1 Tbsp SAF instant yeast 1/2 sugar 1 cup milk, scalded and cooled 1 1/2 tsp salt 1/4 cup unsalted soft butter 2 1/2 cups all-purpose flour 2 eggs 3 Tbsp sugar (to be used for topping with nuts) To MUM5 mixing bowl add warm water, sugar and yeast. Add warm milk, salt, shortening or butter and flour. Mix well. Add eggs and 1/3 cup of chopped almonds. Beat on Speed 2 for 3–4 minutes or until smooth. Cover bowl and allow batter to rise until doubled (about 1 hour). Meanwhile combine remaining chopped almonds with 3 Tbsp sugar. Reserve this mixture.
28 Once batter has doubled, beat once again. Drop batter into well-greased muffin cups filling each cup 1/2 full. Let rise again until doubled. Bake for 15 to 20 minutes in a pre- heated 375°F oven. Place pan in top 1/3 of oven. Remove from oven. Then remove puffs from pan. Allow to cool briefly on wire cooling rack. Serve warm. This yeast batter is somewhat coarse in texture. It serves well for breakfast, brunches and as a dessert with fresh fruit and cheese selections. It will freeze well for 30 days. Lemon Butter Cookies 1 cup pecan pieces Peel of two lemons, grated * 1 1/2 cups granulated sugar * 1/4 cup fresh lemon juice 1 cup unsalted butter 1/4 tsp lemon extract 1/2 tsp salt 2 egg whites 1 tsp baking soda 2 1/2 cups all-purpose flour Glaze: 1 egg 1 Tbsp water 1 Tbsp lemon juice Cream butter until light on Speed 3 or 4, about 3 to 4 minutes. Lower mixer speed and add lemon peel/sugar mixture. Mix. Increase speed and continue to beat until fluffy. Add lemon extract, salt and egg whites. Continue beating. Lower to Speed 1 and add all dry ingredients. Mix briefly. Increase Speed to 2 or 3 and mix thoroughly. Drop by rounded teaspoons on lightly-greased or parchment lined baking sheets. Combine egg, water and lemon juice. Mix well. Glaze each cookie with egg mixture and sprinkle with ground pecans. Bake in upper third of the oven at 375°F oven about 7–9 minutes. Cookies should be puffed and lightly browned on the edges when baked. NOTE: For high altitude baking adjust- ment – increase oven temperature 25°. * The oils in the grated peel will blend with and flavor the sugar. The longer it is combined the more pronounced the flavor. Peel and sugar maybe combined up to 24 hours in advance. Apple Cake 4 Tbsp sugar 4 Tbsp butter or shortening 1 tsp salt 1 cup milk (warmed) 2 eggs 3 1/2 – 4 cups flour 1 Tbsp SAF instant yeast 2 cups cooking apples, cored, peeled, sliced and dipped in lemon juice) cinnamon and sugar mixture
29 Combine all ingredients, except apples and cinnamon and sugar mixture) in mixing bowl. Knead until smooth and elastic, approximately 8–10 minutes. Roll mixture out and place in lightly greased bun pan. Dot lightly with butter, if desired. Arrange apple slices over dough. Sprinkle liberally with cinnamon and sugar. Let rest 15–20 minutes. Bake at 350°F for 15–20 minutes. This recipe is also terrific with fresh sliced peaches, plums, apricots, or any fresh fruit you would like to try. Basic Pizza Crust Recipe of Bob Hair – Sandy Bosch Kitchen Center For (1) 14–16" pizza: 1 1/2 cups hot tap water 2 tsp Real Salt 2 Tbsp sugar 2 1/2 tsp SAF instant yeast 3–4 cup whole wheat or high gluten flour 1 tsp Dough Enhancer Preheat your baking stone to 500°F. Combine all ingredients in Bosch mixing bowl. Knead for 8–10 minutes. Place corn meal or wheat flour on the pizza peel. Roll out the pizza dough on pizza peel. Remember to pick pizza peel up and slide dough back and forth to be sure pizza doesn’t stick to the peel. Put ingredients on pizza and bake according to recipes below. Barbecue Chicken Pizza 1 recipe Basic Pizza Dough 1/4 cups barbecue sauce 1/4 cups tomato sauce 1 cup cooked, shredded chicken 1/2 cups thinly sliced, red onion grated mozzarella fresh cilantro Preheat pizza stone in 500°F oven. Mix barbecue and tomato sauce. Spread over crust. Top with chicken and onion. Bake on preheated stone for 5–6 mi- nutes or until crust is slightly brown. Using the pizza peel, remove pizza. Sprinkle with cilantro then cover with cheese. Place pizza back on the heated stone for 1–2 minutes. Roma Tomato and Basil Pizza 1 recipe Basic Pizza Dough Olive oil 2–3 cloves garlic, crushed Grated mozzarella 3–4 Roma tomatoes, Sliced fresh basil Parmesan cheese, if desired Preheat pizza stone in 500°F oven. Combine oil and garlic. Brush crust with oil mixture. Sprinkle with mozzarella. Top with tomato slices and season with salt and pepper, if desired.
30 Bake for 7 minutes on pizza stone or until cheese is bubbly and crust is browned. Allow to cool for a few minutes. Garnish with basil leaves and Parmesan, if desired. Quinoa Fudge Sour Cream Cupcakes Recipe of Phyllis Stanley – Nutritional Bread Baking Supplies 2 egg whites 1/2 stick butter (soft) 1/4 cup hot water 1/4 cup cocoa powder 1 cup maple syrup 1 1/4 cups Quinoa flour 1 tsp baking powder 1/2 tsp baking soda 2 egg yolks 1/2 tsp salt 1/2 tsp vanilla 1/2 cup sour cream 1 cup pecans (chopped) Preheat oven to 375°F. Beat 2 egg whites in Bosch mixer on speed 4 until stiff. Set aside. Put remaining ingredients in bowl and mix until moist. Gently fold in egg whites. Spoon into muffin tins lined with cupcake liners. Bake for 12–16 minutes. May also be baked as a cake in an 8” x 8” pan for 30–35 minutes. Molasses Crinkles (Moist Ginger Snaps) Recipe of Alma Hair – Orem Bosch Kitchen Center 1/2 cup oil 3/4 cup brown sugar 1 egg 1/4 cup molasses 1 cup unbleached white flour 1 cup whole wheat flour 1/4 tsp salt 2 tsp soda 1 tsp cinnamon 1 tsp ginger 1/2 tsp cloves Sugar (for dipping cookies) In Bosch bowl with cookie paddles, mix oil, sugar, egg and molasses until fluffy. Add flour, salt, soda, cinnamon, ginger and cloves. Mix well. Chill dough. Shape into walnut-size balls. Dip tops of cookies in sugar. Place sugar side up, 3” apart on a nonstick baking sheet or parchment paper. Sprinkle top of each cookie with 3 drops of water to get a crackled effect. Bake in 350°F oven 10–12 minutes until set but not hard. Yield 48 cookies.
