These two speeds ensure optimal RPM level, for maximum juicing efficiency (efficiency describes amount of juice extracted from produce). Speeds are selected simply by turning the control dial to the desired setting. HI (2) Best for harder produce: carrots, gingerroot, beets and pineapple (with rind).
