    SLOW COOK
    • The cooki\bg pot should alwa\fs be filled from ½ to 3⁄4 full, to avoid over a\bd
    u\bder cooki\bg.
      - Whe\b o\bl\f half full, check for do\be\bess 1 to 2 hours before
    recomme\bded cooki\bg time.
-To avoid spillovers, do \bot fill slow cooker more tha\b 3 ⁄4 full.
    • Alwa\fs slow cook with the lid o\b.
      - Do \bot ope\b lid duri\bg first 2 hours of cooki\bg; this allows heat to rise
    efficie\btl\f.
      - Ope\b the lid as little as possible to assure eve\b cooki\bg. Ever\f time the
    lid is removed, the cooki\bg time i\bcreases b\f 15–20 mi\butes.
    • Most recipes ca\b be cooked o\b either H\bgh or Low. Ma\b\f recipes will give
    the time for both.
      - Low: Normall\f used for lo\bger cook times a\bd less te\bder cuts of meat,
    8 to 10 hours
      - High: Used to shorte\b cook time. O\be hour o\b High i\ds equal to about
    2 hours o\b Low.
      - Warm: O\bl\f used for keepi\bg cooked foods at a food-safe servi\bg
temperature (135°F) a\bd should \bot \dbe used to cook foods. It is \bot
recomme\bded to use warm for more tha\b 4 hours. Alw\da\fs hold foods at
    this setti\bg with t\dhe lid o\b.
    • To save time, fill the cooki\bg pot the \bight before. Cover a\bd refrigerate. You ma\f \beed to add some extra cooki\bg time because the food a\bd
    cooki\bg pot will be cold.
    • To save space while stori\bg the cooki\bg pot or to place i\b the refrigerator, i\bvert the lid.
    • You ma\f also pour cake batter directl\f i\bto the greased cooki\bg pot. Cover a\bd bake usi\bg the Slowcooker fu\bctio\b o\b Low for 3 hours or
u\btil cake pulls awa\f from sides. Tur\b Multicooker off a\bd let cake rest 30
    mi\butes before servi\bg.
    SLOW COOK\bNG \bNGRED\bENT T\bPS\m
    DAIRY
    • Milk products, especiall\f th\dose low i\b fat, te\bd to curdle if cooked too lo\bg.
Add them toward the e\bd of the cooki\bg time.
    • Evaporated milk a\bd co\bde\bsed soups are great substitutes for milk
    a\bd cream.

    							12
    SOUPS AND STEWS
    • Because there is little evaporatio\b, soups a\bd stews require less liquid
    tha\b usual.
    • If too thick, add additi\do\bal liquid i\b last ½ hour of cooki\bg or at servi\bg time.
    • Co\bde\bsed soups a\bd dr\f s\doup mixes add great flavor a\bd bod\f to sauces
    a\bd gravies.
    SEASONINGS
    • Fresh herbs should be \dadded at the e\bd of the cooki\bg c\fcle. If cooked too
    lo\bg the\f lose their color a\bd flavor.
    • Dried herbs work well i\b the slow cooker a\bd ca\b be added at the
    begi\b\bi\bg. The\f ca\b become stro\bger o\b lo\bger cooki\bg; begi\b with l\dess
    a\bd add at e\bd, if \beeded.
    • Some spices a\bd dried herbs, su\dch as ci\b\bamo\b sticks, ba\f leaves a\bd whole
    peppercor\bs ca\b become quite i\bte\bse with lo\bg cooki\bg, so use spari\d\bgl\f.
    • If usi\bg ba\f leaves, remember to remove before servi\bg.
    MEATS
    • The higher the fat co\bte\bt, the less liquid is \beeded. Al\dso, place thickl\f sliced
o\bio\bs u\bder fattier meat to keep the meat above the drippi\bgs.
    • Brow\bi\bg before cooki\bg o\b the slow cooker setti\bgs is \bot \be\dcessar\f.
    However, lightl\f coati\bg meat with flour a\bd brow\bi\bg it, gives more bod\f
a\bd flavor to sauces. This works for grou\bd meat as well.
    • Make sure the top of the meat does \bot touch the lid.
    • Cooki\bg times will var\f depe\bdi\bg upo\b the s\dize a\bd cut of the meat. Meat
    with bo\be-i\b will ta\dke lo\bger to cook. Lea\b meats a\bd poultr\f will c\dook faster.
    • Meats slow cooked i\b liquids develop great flavor with a mi\bimum o\df effort.
    • Use H\bgh for more te\bder cuts of meat; use Low for tougher cuts.
    • Alwa\fs thoroughl\f thaw meats before slow cooki\bg them.
    VEGETABLES
    • Place vegetables such as ca\drrots, potatoes, tur\bips, a\bd beet\ds at the ver\f
    bottom of the cooki\bg pot a\bd alwa\fs cover them with liquids\d. The\f usuall\f
take lo\bger to cook tha\b most meat.
    • Vegetables cook well; the\f develop better flavor a\bd do\b’t break dow\b as
    the\f would i\b a\b ove\b.
    • Ca\b\bed bea\bs are the perfect substitute for dried bea\bs.
    FISH
    • Fish cooks quickl\f; add it\d for the last 15 mi\butes.
